Nutrific Granola Snack Balls – A recipe

Last week I did something fun. I was challenged to create a unique dish using Nutrific cereal. Not only that, my creation was judged by Chef Matt Manning and I competed against a bunch of awesome people. The challenge was part of their #1000Ways campaign which, simply put is about the 1000 ways you can eat Nutrific. They’ve created an interesting site where you can browse these #1000Ways. So, for the challenge I knew that I would be creating some kind of peanut butter snack. I’ve been making protein snack bars with vegan protein for a few months now and I have become addicted. Instead of keeping it as healthy as I usually do I decided to create a ‘Breakfast Party’ and do something fun. The result – Nutrific Peanut Butter Granola Snack balls on a bed of peanut brittle, 100s and 1000s sprinkes and chocolate. All topped with Nutella and served with whipped cream. I’m sorry, but there should have been more whipped cream.

I ended up being the Runner up! Which I am so proud of. I haven’t told many people this, but a lot of my time at home is spent cooking. Hubby and I have been making pizza and pasta from scratch for the last few months and it’s easy for him to say he loves my cooking. But, when Chef Matt Manning said my food tasted great I pretty much flew through the roof.

Since I’m still on this high, I figured I’d let you guys know how to make the Nutrific snack balls. I didn’t do much real measuring on the day, but these are so easy you can adjust the ingredients to your taste.

What you’ll need for the balls:

  1. Nutrific cereal (3-4 bars)
  2. Peanut butter (3 tablespoons)
  3. Honey (2 teaspoons)
  4. Granola (1 tablespoon)
  5. Chopped almonds (1 tablespoon)


Crush Nutrific bars. Mix everything above together until homogeneous. Pack tightly into balls and coat with more crushed Nutrific. Lay out on a tray and place in  the fridge.

What you’ll need for the ‘Party’ bed:

  1. 100s and thousands
  2. Crushed Peanut Brittle
  3. Crushed flaked chocolate

Crush everything and mix together gently in a bowl.

What you’ll need for the rest:

  1. Whipped cream
  2. Strawberries
  3. Nutella (or any chocolate spread)

I think the picture explains this but all you need to do here is douse the Nutrific balls in chocolate. To your taste ;).
